Rhubarb Cereal Crisp
So yummy even without ice cream!
4 cups chopped Rhubarb
1 ¼ cups Flour
¼ cup Sugar
½ cup Strawberry Jam
1 ½ cups Honey Almond Granola
½ cup Brown Sugar
½ cup Pecans (or extra Almonds)
½ tsp Cinnamon
½ cup Butter
Combine Rhubarb, ¼ cup flour, sugar, stir in jam and set aside.
In another bowl combine granola, brown sugar, pecans, cinnamon and remaining flour. Cut in butter until resembles coarse crumbs.
Press 2 cups of the granola mixture into a greased pie plate or 8” square baking pan, spread rhubarb mixture over the crust. Sprinkle with remaining granola.
Bake at 375 for 30-40 minutes or until filling is bubbly and topping is brown.
Serve warm with ice cream, or custard.
*I used homemade strawberry peach jam, and homemade granola

Granola
Granola
Super good, especially with Vanilla yogurt and fruit
½ cup margarine
¾ cup honey
1 ½ tsp vanilla
3 cups old fashioned oatmeal
1 cup chopped nuts
1 cup sunflower seeds
1 cup pumpkin seeds
Melt together margarine, honey and vanilla in a large pot. In another bowl mix together remaining ingredients and add to honey mixture. Remove from heat and stir until well mixed. Bake at 325 for 25 minutes stir a couple times.
When cool add 1 ½ cups of dried fruit.
Subs or additions
Nuts: Almonds, pecans, peanuts, cashews
Others: coconut, wheat germ, Kashi cereal, bran flakes, sesame seeds, flax seed
Fruit: any dried chopped fruit

Tuna Spag
Tuna Spaghetti
Sounds crazy, but tastes yummy. Super quick to whip up.
2 cloves garlic
1 tbsp of butter (I use margarine)
796ml can of tomatoes (diced, stewed, crushed, whatever you heart desires)
1 tsp dried Oregano
1 tsp dried Parsley
6 1/2oz can of Tuna
Dash of salt and Pepper
1 tbsp flour
3 tbsp water
Saute garlic in butter, add canned tomatoes of your choice, Parsley and Oregano. Simmer 15 minutes on low heat. Add tuna and salt and pepper, stir well to mix in. Mix up flour and water in separate cup, add to sauce, stir until thickened.
Serve over pasta with Parmesan Cheese - MMMMMMMMMMM Good!
